Braun recipe with Carol Singleton

'Carol Mom's Braun recipe' 

Pork shank
Beef shin
Beef neck (Makes no difference the quantities )
(You can use any gelatine bones like pork trotters. Oxtail will be superb)
1tsp coriander, 1/4 tsp allspice, 2 tsp salt, pepper. 
250 ml white vinegar. 
4 bay leaves 
5 whole cloves 
12 peppercorns

Make a bouquet garni using.. (spices put into muslin/cheese cloth and tied up)

12 peppercorns
Bouquet Garni

Put meat in pot cover with water. 
Add 1tsp coriander, 1/4 tsp allspice, 2 tsp salt, pepper.
Add 250 ml white vinegar.
Place garni in the pot.
Cook till meat is tender and falls off the bone.
Allow to cool.
Remove all bones.
Finely shred the meat.
Add 3 Tbs gelatine prepare as per directions.
Add gelatine to the shredded meat.
Place meat in a container and press down.
Allow to set overnight in the fridge.
